Recipe – Cheesy Potato Soup

I had planned to make this soup for the Autumn Equinox, and then for Samhain, but events conspired against me.  It was a cold day yesterday and I decided on the spur of the moment to cook this soup last night.   It is, I feel, perfect for Autumn and Winter.  Beautifully warming, very filling and wonderfully cheesy.  My son professed to hate it, until he actually ate some and then proceeded to demand more and ask for some for lunch today.  It has to be my favourite soup and I can’t help but share it.
