Sloppy Joes – Lenten

Sloppy Joes – Lenten April 8, 2005

Saute until tender:
3 Tbsp oil

1 lg onion (diced)
2 med green peppers (diced)

Add:
3 c. tomato sauce
1 1/2 Tbsp chile powder (or more)
1/8 tsp black pepper
1 Tbsp soy sauce
1 Tbsp (salad) mustard
1 Tbsp honey
Simmer together over low heat about 20 minutes.

Brown in another skillet:
3 Tbsp oil
1 1/2 lbs firm tofu (crumbled)
5 Tbsp tamari
When tofu is well browned and has absorbed flavoring, add tomato sauce.
Serve on buns (or rice).

I like these better than the meat kind. Kids also approve!
