Sweet Potato Bars (Lenten Dessert)

1 c. mashed sweet potatoes
1/2 c. vegetable oil

1 c. sugar
Mix together.

Add:
2 c. flour
1 1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp nutmeg
1/2 tsp cinnamon
1 c. raisins (dust w/ flour so they don’t sink to the bottom of batter)

Pour into 9″ X 13″ pan; bake @ 350 for 25-30 min.

After baking, drizzle glaze all over the top.

Glaze:
1/4 c. confec. sugar
2 Tbsp hot water

Cut into squares when cool.
